Description
This wine features very complex layers of blackberries, cherries and plums, enhanced with spicy, smoky oak on both the nose and the palate. Its full-bodied and tannic nature holds up well into the finish. Good steak wine.
History
This is our first vintage after 3 years trying to make this wine, Wine makers Herve Joyaux Fabre and Ivan Ruiz felt very happy and satisfied when this wine was finally produced. Our passion and determination to make great wines inspire us to be better every vintage. We hope we can bring this wine to you every year. The name MOIVADA is the combination of letters from my wife and two son's names. We combine the fist 3 letters of each name, Monica, Ivan and Daniel. We combined 85% Cabernet with 15% Malbec. In the vineyards, traditional methods of plowing and culture are practiced, without herbicides in order to obtain guaranteed ecologically fit grapes. Once they reached their optimum ripeness, the grapes are picked by hand and gathered in small trays of 20 Kg in order not to damage them. The fermentation is carried out with indigenous yeast at a controlled temperature. Two to 4 pumping over per day and a long maceration period (skin contact) of 30 days allow a good extraction and give a great structure to the wine. Prior to the bottling, the wines are fined with egg whites allowing perfect clarity without altering their personality or structure.
